What would be better on one of these hot summer days than an ice-cold, fruity frozen cocktail? This Frozen Spiked Watermelon Slushie checks all the right boxes—sweet, cold, refreshing, and just the right amount of boozy.
I used to love nothing more than a frozen Icee from the convenience store in the hottest part of summer. I haven’t had one in years because of all the sugar, but this cocktail satisfies that same craving. And even better, because it’s basically puréed fruit with no added sugar, it’s a sweet treat that’s healthy for me too!
It’s one of those frozen summer drinks that looks just as good as it tastes in the prettiest pale pink (watermelon pink of course), It only takes a few simple ingredients and a blender to whip up, and you can easily make it for one or scale it up for a crowd.
Ingredients for the Spiked Watermelon Slushie.

Here’s what you’ll need to blend up this frosty cocktail (for one generous serving):
- 2 cups frozen watermelon chunks (see tips below for freezing)
- 1½ oz vodka
- 2 oz prosecco or sparkling wine
- Juice of ½ lime
- Optional: Fresh mint or lime wedge for garnish
- Optional: 1 teaspoon simple syrup (depending on sweetness of watermelon—I did not use any and it was plenty sweet)
How to Make It:
1. Freeze the watermelon.
Cut seedless ripe watermelon into cubes and lay them in a single layer on a parchment paper-lined baking sheet. Freeze until solid, not just cold—about 4 hours or overnight. (You can store the watermelon cubes in a zip-top freezer bag after they’re frozen.)

2. Blend.
Add the frozen watermelon, vodka, prosecco, fresh lime juice, and simple syrup (if using) to a high-powered blender (or a food processor). Blend until smooth and slushy. If it’s too thick, add a splash more prosecco or cold water to loosen it up. Too thin, add more frozen watermelon chunks.



3. Serve.
Pour into a cocktail or wine glass. Garnish with fresh mint, a lime wedge, or a small watermelon wedge if you’re feeling fancy.

- 8 cups frozen watermelon chunks
- 6 oz vodka (about ¾ cup)
- 8 oz prosecco or sparkling wine (1 cup)
- Juice of 2 limes
- (Optional: 1–2 tablespoons simple syrup)
Directions:
- Add everything to a high-powered blender (in batches if needed).
- Blend until smooth and slushy. Adjust the consistency by adding a splash more prosecco or cold water if it’s too thick—or more frozen watermelon if it’s too thin.
- Serve in chilled glasses and garnish with mint, a small watermelon wedge, or lime slice.

Tips for the Best Frozen Watermelon Cocktail.
- Use fully frozen watermelon for the best slush texture—even a few partially thawed pieces will water it down quickly.
- Substitute lemon vodka for the plain vodka for a zesty twist. Replace the lime juice with fresh lemon juice.
- No blender? You can mash thawed frozen watermelon and stir with the other ingredients over crushed ice—it won’t be slushy, but it’s still a cold and delicious drink.
- Make it later in 5 minutes. This drink is the perfect way to use up excess ripe watermelon. Just freeze the chunks when the sweet watermelon is at it’s peak for later, and put this drink together in 5 minutes when you’re ready.
