Cut fresh, seedless watermelon into chunks and freeze in a single layer on a parchment-lined baking sheet until solid (about 4 hours).
Add frozen watermelon cubes, vodka, prosecco, lime juice, and simple syrup (if using) to a high-powered blender or food processor.
Blend until smooth and slushy. Add a splash more prosecco or cold water if the mixture is too thick, more frozen watermelon if too thin.
Pour into a chilled glass.
Garnish with a lime wedge, sprig of mint, or a small watermelon wedge, if desired.
Serve immediately and enjoy!
Tips:
Chill your glasses in the freezer for 10–15 minutes before serving. Your slushie will stay icy longer and look extra pretty with in the frosty glass.
For a mocktail version, leave out the alcohol and use sparkling water in place of prosecco.
Make it ahead: Blend the drink and freeze in an airtight container. Stir or re-blend before serving if it separates.
If your watermelon is very sweet, you may not need any simple syrup at all—I did not.
