You see some version of buffalo chicken dip at just about every football-watching party. It’s one of those dishes people expect to see on the food spread.
There are a lot of different kinds out there. Some are too spicy, some are overly cheesy, and some look great coming out of the oven but quickly become too “solid” once they’re sitting out. This one stays creamy because the proportions are simple and balanced. It’s a party appetizer you can put out and not worry about, which is exactly what I want when people are coming over.
This recipe for buffalo chicken dip is nothing fancy—just a delicious, dependable, classic dip that always seems to disappear. It’s also one of those appetizers that pulls its weight when you’re trying to make a meal out of what’s on the table.

Just Five Ingredients (Plus Dippers).
This version keeps things simple on purpose. It uses just five main ingredients and comes together quickly in the crockpot. The slow cooker isn’t about cooking it for hours; it’s about keeping it warm and scoopable once it’s ready.
As written, the dip itself is low carb and keto-friendly— the carbs come from what you serve it with.

Ingredients You’ll Need.
- 2 cups cooked chicken, shredded (about 1 pound)
- 8 oz cream cheese, softened
- ½ cup buffalo wing sauce (such as Frank’s RedHot Buffalo Wing Sauce, which is low carb and keto-friendly)
- ½ cup bottled ranch dressing
- 1 cup shredded medium cheddar or Colby-Jack cheese
Optional for serving:
- sliced green onions (for garnish)
- extra buffalo sauce (for drizzling)
Making Buffalo Chicken Dip in the Slow Cooker.

- Add the shredded chicken, softened cream cheese, buffalo wing sauce, ranch dressing, and shredded cheese to the slow cooker.
- Stir to combine as best you can. The cream cheese won’t fully blend in yet— just work it into the mixture and break it up so it’s evenly distributed.
- Cover and cook on LOW for about 45–75 minutes, stirring once or twice, until the cream cheese is fully melted and the dip is smooth and creamy.
- Once melted, switch the slow cooker to WARM and serve.
If the dip thickens slightly as it sits, a quick stir usually brings it right back.
A couple of helpful notes.
How to soften cream cheese quickly:
If you forget to take it out ahead of time, unwrap the cream cheese and microwave it on a plate for about 15–20 seconds. It should feel soft, not melted.
About shredding your own cheese:
Cheese shredded from a block melts more smoothly because it doesn’t have the coating used on pre-shredded cheese. But bagged shredded cheese will absolutely work if you’re short on time, which often happens for a party recipe.
Oven Option (If You’d Rather Bake It).
- Preheat the oven to 350°F.
- In a bowl, mix the softened cream cheese, ranch dressing, and buffalo sauce until smooth.
- Stir in the chicken and shredded cheese.
- Spread into a small baking dish.
- Bake uncovered for 20–25 minutes, just until hot and bubbly.
Try not to overbake it. You want it heated through, not tightened up.

How to Serve Buffalo Chicken Dip.
This dip is best served warm. Like most cheese-based dips, it will naturally thicken as it cools.
When I’m serving it at a party, I usually leave it right in the slow cooker on warm and let people help themselves. It keeps the dip creamy and scoopable the entire time it’s out.
I typically serve it with tortilla chips, but the dip itself is low carb and keto-friendly, so celery is a great option if you want a low-carb choice alongside the chips!
If you’re looking for an additional low-carb party appetizer, these sausage and cheese stuffed mini peppers are always popular around Super Bowl Sunday too.
Make-Ahead & Reheating Tips.
- Make ahead: You can assemble everything a day ahead and refrigerate.
- Reheat: Warm gently in the slow cooker or oven, stirring occasionally.
- Leftovers: Reheat small portions in the microwave at reduced power, stirring once or twice, so it stays creamy.

Buffalo Chicken Dip FAQs.
What kind of chicken works best?
Rotisserie chicken is my go-to because it’s easy and stays tender. White meat works best here because it’s leaner and shreds more cleanly, which helps keep the dip creamy instead of oily. A mix of white and dark meat is fine, but using mostly dark meat can change the texture a little. I avoid canned chicken for the same reason, but that’s a personal preference.
Why does buffalo chicken dip sometimes turn greasy?
This usually happens when there’s too much cheese or when very fatty cheese is used. Using a moderate amount of cheddar or Colby-Jack and stirring occasionally helps keep the dip smooth instead of separated.
Can I add blue cheese or other extras?
You can. Some versions include blue cheese crumbles, extra cheese, or green onions mixed in. I keep this version simple and classic because it appeals to more people and stays creamier as it sits. If you love blue cheese, it can be added as a garnish or stirred in at the end.
Is buffalo chicken dip low carb or keto?
Again yes— the dip itself is low carb and keto-friendly. The carbs come from serving it on chips, crackers, or bread, so celery or other raw veggies are an easy low-carb option for parties.

This is the kind of recipe I like to have on hand before I start overthinking what to bring. Before I convince myself it needs to be more complicated.

Great idea! Thank you!! Just what I needed. I tweaked a little by omitting the ranch dressing and used canned salsa style tomatoes instead. Frank’s on the table for personal taste. Celery sticks is a winning touchdown.
That sounds like a tasty variation…thanks for sharing it Marilyn!
