- 32 oz frozen corn, thawed (or canned, drained well)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 1/2 tablespoons fresh lime juice
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- Pinch of cayenne (optional)
- 5 oz cotija cheese, crumbled (or feta)
For topping:
- Additional cotija cheese
- Light sprinkle chili powder or Tajín
- Fresh cilantro, chopped (optional)
How to Make Mexican Street Corn Casserole.
1. Cook the Corn.

In a large skillet, melt a little butter over medium heat. Add the corn and cook for 5–7 minutes, stirring occasionally, until heated through and just starting to get a little color. (This step adds flavor and keeps it from tasting like it came straight out of a bag.)
2. Stir in the Creamy Base.


Lower the heat and add the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and cayenne (if using). Stir until everything is evenly coated. It should be creamy but still a little loose.
3. Add Cheese.
Stir in about half of the cotija cheese so you get its salty, crumbly texture throughout.
4. Transfer and Bake.
