Mississippi Roast has got to be one of my hands-down favorite Southern comfort food dishes to make. Why?
- It literally takes less than five minutes to dump the few simple ingredients into a slow cooker. No searing, no chopping, no prep.
- It makes the most tender roast. This inexpensive cut of beef just falls apart making using a knife optional.
- It comes out full of beef flavor in a rich gravy. The kind of buttery beef goodness that begs for mashed potatoes.
The Five Simple Ingredients for Mississippi Pot Roast.

- 3-4 pound Boneless Chuck Roast
- 1 package of Au Jus Gravy Mix
- 1 package of Ranch Dressing Mix
- 1 stick of Unsalted Butter
- 5-6 Pepperoncini Peppers
How to Make the Original Mississippi Roast Recipe.

1. Place the roast in the bottom of your crock pot.
2. Sprinkle the packet of dry ranch dressing and au jus packet evenly over the top of the roast.
3. Add the stick of unsalted butter on top of the roast, followed by the pepperoncini peppers.

4. Cover and cook on low heat for 7-8 hours or until the roast is fork-tender.

How to Make Mississippi Roast Less Salty.
The original Mississippi Roast recipe can taste a little too salty for some folks because of the salt in the au jus and ranch seasoning packets. Plus, the peperoncini peppers are salty, especially if you add any of the brining juice.
This recipe will always have a good bit of sodium in it, but there’s an easy way to make it taste a little less salty. First, make sure to use unsalted butter instead of regular salted butter. Then, opt for a low-sodium brown gravy mix instead of the au jus. Or use the following method below for making more gravy, using a low-sodium beef bouillon paste.
How to Make More Gravy for Mississippi Roast.
While the gravy in the original recipe is delectable, it doesn’t make much extra to put over mashed potatoes or rice.
That’s why I prefer this method for two reasons: 1) I get more of that rich, delicious gravy and 2) I opt for low-sodium Better than Bouillon beef flavored bouillon paste, which helps lower the salty taste. It takes an additional few minutes because you make the gravy before putting it in the slow cooker, but you end up with thicker gravy and more of it in the end.
Mississippi Roast with More Gravy Instructions:
1. Make the gravy first:
- In a saucepan, melt the stick of butter with 3 tablespoons of low sodium beef Better Than Bouillon (regular is okay if you can’t find low sodium in the grocery store).
- Slowly add 3/4 cup of all-purpose flour (1/4 cup at a time), whisking until smooth.
- Add 1 and 3/4 cups of water and 1/2 teaspoon of black pepper. Whisk and heat until smooth.
2. Put the roast in the crock pot and pour the gravy over it.
3. Sprinkle the ranch seasoning packet over and add 6-7 pepperoncini peppers.
4. Cover and cook on low heat for 7-8 hours.

Tips for the Best Mississippi Roast.
- Avoid using extra salt in the original recipe, as the au jus mix and package of ranch dressing mix provide plenty of seasoning.
- For a thicker gravy, remove the roast after it’s done and whisk a cornstarch slurry into the crock pot juices. Add a little beef broth if needed.
